Pizzas – Individually Sized

This is the Great Italian Chefs’ pizza dough recipe although I changed the preparation to show you how to create 4 generously-sized individual pizzas with your choice of toppings.

I made this recently with children aged 5 to 12 and they loved participating in every step, kneading dough, smelling herbs, and deciding on their own toppings/presentation.

Moroccan-Spiced Roasted Vegetable Tart

Pastry is easy, and this version using roasted parsnip is as easy as my other pastry recipes. There’s a crossover between the pastry and filling steps, but doing it all together means less preparation time overall.

The roasted parsnip pastry (thanks Steph!) is filled with layers of roast veg, chickpeas, spinach, and more, for a hearty and warmingly-spiced vegetarian main meal.

Serves: 10-12 as a starter, 4-6 as a main meal

Canine Crunchy Biscuits

My Canine Liver Treats are the bomb. But I keep getting asked to make crunchy biscuits for dogs. I’ve done the research and practice, so you don’t have to; you can make these at home for a fraction of the cost of posh treats. Drying the vegetables is necessary, so start the night before.

Several veg & herb/spice suggestions are in the footnotes, as well as an option to add meat or fish.

Makes: 30+ treats depending on size

Palmiers – Sweet and Savoury

This week the coeliacs unfortunately got shafted, because I had shop-bought puff pastry in the freezer begging to be used. Making GF puff pastry from scratch will probably never appear on these pages …

So many flavour combinations to try; here are 1 sweet and 1 savoury suggestion, but more choices are in the Flavour Options footnotes.

Makes: up to 6 dozen depending on size (see Sizing footnote)

Alternative Mince Pies

When I asked Twitter for alternatives to traditional mince pies for the holidays, Kali Stacey forwarded me this recipe (interesting history here on this Scottish treat).

Because I had plums & raisins hanging about, I used them – but you could use currants/dried mixed fruit as you prefer. You need to start the night before serving.

Makes: 24 (+ extra – see Footnote)
